Đun đường với ít nước sâm sấp, nhỏ vài giọt chanh, khi thấy đường chuyển vàng cánh gián, kiểm tra bằng cách dùng đũa nhúng vào thấy đường cứng là đạt. Đổ caramel vào khuôn bánh. Khoảng 12 khuôn nhỏ.

Đánh tan phần trứng cho đều, tránh đánh mạnh tạo bọt, sẽ làm rỗ bánh. Dùng nồi vừa nãy làm caramel, đổ sữa vào đun vừa nóng( cỡ nước tắm), đổ sữa đặc vào trộn, tắt bếp dùng lược để đổ trứng vào trộn chung.

Đổ hỗn hợp vào khuôn, đậy nắp khuôn đem hấp lửa nhỏ khoảng 15-20 phút. Kiểm tra bánh chín bằng cách dùng cây tăm ghim vào bánh thấy không dính là bánh chín.
